THE HOLY SNAIL

SAUVIGNON BLANC 2012

Thierry Delaunay studied in Bordeaux and has completed winemaking vintages across the globe in pursuit of vinous perfection. In 1998 he returned to his father’s estate to take on the role of cellarmaster. For this Sauvignon he presses the grapes gently in a pneumatic press, then ferments the wine in stainless steel vats, leaving it on its yeast lees for three months to develop richness and flavour.


TASTING NOTES

Very fruity white wine. Captivatingly fresh, beautifully balanced, long and full in the mouth, it unleashes many complex aromas (exotic fruits, blackcurrant buds, grapefruit, peach), as well as floral notes.

Rich fish (salmon, tuna etc)
Shellfish
Vegetarian
Goat's Cheese
A perfect white to chill and sip on its own, too.
