The Grapes are sourced from plots in Cafayate and the Uco Valley.
After selection fermentation is carried out in stainless steel at a cool temperature with indigenous yeast before resting on lees for 3 months to add structure to the wine.Malo is prevented.

It has all the floral subtlety and delicate exotic nuance that this grape is so cherished for but, unlike a lot of other examples, many from Salta Province in the far north,
this one is more subtly nuanced than in your face!
Also, unlike many others, this one is really lean and lively on the palate, ultra zesty and fresh.
In fact, texture wise, it feels more like a very good Sauvignon Blanc, such is the acid balance and structure in relation to the lovely ripeness of fruit.
