This fresh Marlborough white elegantly dances across the fine tightrope between sweetness and acidity, it is as perfectly balanced as a wine can be. The first sip crunches on the palate like a bite from a bright green apple and develops into zesty citrus before rounding off with ripe yellow stone fruits.
The Doctors' estate harvests their Riesling grapes early in their development to keep the sugars low.
Temperatures are kept very low during the ageing process, with as little intervention involved after their gentle pressing.
Fermentation only stops when the sugar and acid levels are deemed perfectly balanced.
